Real shade and real rain protection, which is what makes an outdoor kitchen usable in a Toronto summer. Heavier structure, needs proper footings, and may need a permit.
Shade sail
Cheapest, good shade, and it comes down for winter. It needs solid anchor points and it will not survive being left up through a snow load.
Footings matter here
Anything permanent needs footings below frost depth. A pergola sitting on surface blocks will move, and it will move unevenly.
